Apple Pie Bread

Oh my goodness! I wish you could have smelled my kitchen when this was in the oven! This is so moist and delicious! The streusel topping is amazing! I wanted to make a quick bread this weekend so I could try out my new Giada De Laurentis bread pan (below). Isn't it nice? Target carries her line of products. I just might have to go back and check out the rest of her … [Read more...]

Corn Bread

I've been on a corn bread kick lately. I love to eat it warm with light margarine melted on top! I tweaked a recipe that I had and I'm really happy with how this came out. I love it because it's not too sweet like some store-bought corn bread. So put on a pot of coffee and give this a try! This recipe can also be used for corn muffins. Corn Bread Ingredients 1 1/2 cups all purpose flour 1 … [Read more...]

Semester at Sea Update

It's been one week since my son left on his voyage with Semester at Sea. He is scheduled to arrive in Hawaii tomorrow. This is a photo of the MV Explorer. It's considered a "small" ship. Small enough to be bothered by big waves. This is what Matthew said about the waves: "There are two things that are certain on a SAS ship... …they are: waves and reading. Most people didn’t sleep well … [Read more...]

All Aboard!

My husband took this photo of my son Matthew this morning in San Diego, CA. This bus was about to bring him to the MV Explorer, the ship that will take him on a voyage around the world. The parents were not allowed to bring their children to the ship because they had to board the ship in Mexico. It will depart later today and head for Hawaii. [Cue the ukulele music!] If you'd like to follow … [Read more...]

I Hate Goodbyes!

I've never been able to say goodbye to family without crying and this morning was no exception. My son Matthew left this morning to start his travel abroad program around the world. (see previous post) We had a long hug and a tearful goodbye. (wait...I need another tissue) How is a 20 year old ready to do this? My husband and I talked about this yesterday. We both agreed that we never … [Read more...]

Busy! Busy! Busy!

What a week! My husband left early this morning for a business trip to California and I've been helping my college son Matthew get ready for his big trip around the world with Semester at Sea. Matthew will fly out to California this Friday and meet up with my husband. It is very comforting to have my husband see him off and make sure he is all set. As worried as I am for Matthew, I couldn't be … [Read more...]

Sausage Vegetable Medley

My family loves sausages. There is a pizza restaurant nearby that makes the best homemade sausages. Once in a while, I'll buy 3 - 4 pounds of fresh homemade sausages from them and freeze some of it to make this recipe or I'll add the sausages to my spaghetti sauce. I used turkey sausages this time as I need to get back to some healthier eating after the holidays. Sausage Vegetable Medley 2 … [Read more...]

Mohegan Chicken

Have you ever been to Mohegan Sun Casino in Uncasville, CT? I go a couple times a year. I actually won $800 on a slot machine last year! That was so much fun! Many years ago, I had a chicken dish at Mohegun Sun that was so good. I tried to recreate it as best as I could. So this is my version of that dish. I hope you like it! Mohegan Chicken 3 tablespoons olive oil, divided 10 oz. … [Read more...]

Chocolate Peanut Butter Cup Cookies

When it comes to dessert, I LOVE the combination of chocolate and peanut butter! These delicious cookies are soft in the middle and are highly addictive. Next time I'll add more chopped peanut butter cups because I felt that there wasn't enough in each cookie. Don't you love quality control? Sometimes you just have to have more than one cookie to make sure the recipe is blog worthy! :) 2 … [Read more...]
