With a husband, four kids, three fish, two dogs, two blogs, and a cat — my life is quite busy! Even so, I always like to have a dinner on the table as many nights as possible. Normally, I plan a menu for the week, but sometimes the kids’ schedules don’t allow us to eat what’s on the menu that night so I always have a “go-to” meal that is fast, delicious, and easy to prepare.
